Fresh spinach
The spinach is also on hyper drive. I'm afraid it's going to go to seed before we can eat it all. I just brought in an armload and it was wilting. Fresh spinach is usually lightly steamed or parboiled for Japanese dishes but it was so perfect and fresh, I dumped it in a bowl of ice water and it crisped up so I could serve it as a salad. I wouldn't have minded some bacon or anchovies at this point, but a quick mock-Caesar dressing was good enough. I downed a big bowl of it and suddenly wanted more - I felt like the woman in the fairy tale who was craving rapunzel and needed to fetch it from the witch's garden to satisfy her cravings. I wanted to run back to the garden and rip it from the soil. Maybe tomorrow - I can sneak into the spinach patch and get some more. It was so good -it just tasted like freshness.
