Sweet Potatoes, Kara imo

The end of May, just before the big rains begin, is the best time to plant sweet potatoes, or kara-imo. These are the red-skinned, pale fleshed potatoes that are often eaten steamed. The seedlings are raised by our neighbor (not exactly sure how she does it).They have a few small roots along the stem and these are tucked into the dirt that we have prepared....long rows of mounded soil covered by black plastic. We could just as easily have used the wheat straw but my mother-in-law, the boss of the operation, is really hooked on plastic. These will be ready in the fall.

Which way should the leaves face? A neighbor came along and said that they should face west. My mother-in-law insisted they should face east. What we would have done if the field had run north to south, I don't know. Most of the plants are facing east but some are facing west...who knows if it will make a difference!
